If you looking for something to make for lunch then join me divulge in this quick and easy recipe of coconut curried rice with baked chicken and red sauce.
3 cups of rice
1 stick of carrot
1/2 an onion
2 cloves of garlic
1/2 a teaspoon of curry
A handful of broken spaghetti
2 cans of coconut milk
3 tablespoons oil
Cut up onion and carrots into small cubes. Slice garlic into thin stripes.
In a medium sauce pan (or which ever pan works) heated on fire pour oil and allow to heat up
Add curry, onion, carrots, and garlic into pan and stir making sure it doesn’t burn
when noodles start to brown, add salt to taste and add the coconut milk.
Add rice and stir. Add about 1 cup of veggie broth or water to it.
Reduce the heat and allow rice to cook
When rice is soft and tender, its ready to eat. Allow to stand for 5 minutes, fluff it and serve.
Serve with a side of salad of any choice and a good glass of chilled drink.
